Humus / Hummus
600 gr haşlanmış nohut (ister evde düdüklüde haşlayın isterseniz konserve kullanın ama katkısız olsun)
1/2 çay bardağı tahin
1 diş sarımsak
1 küçük limon
Üzeri için yeterli miktarda dolma fıstığı, tereyağı ve pul biber.
Yapılışı:
Haşlanmış nohutları, tahini, sarmısağı ve limon suyunu rondo veya robotta iyice çekin. İçerisine bir miktar sıcak su ilave edin. Eğer konserve nohut kullanacaksanız tuz eklemeyin. Nohutu kendiniz haşladıysanız biraz tuz da ilave etmeniz gerekir. Ayrıca ben sarımsağı 1 diş kullandım siz isterseniz 2 diş te kullanabilirsiniz.
Daha sonra bir servis tabağına alın. Üzerine tereyağda pul biberle kavurduğunuz dolma fıstıklarını ve birkaç parça salatalık turşusunu ekleyerek servis edin. Afiyetle yiyin :)
English Translation of this Recipe:
One of my most favorite dishes of all times is hummus the origin of which is coming from the Arabic cuisine. Hummus may be regarded as a kind of a mezze which goes really great with a piece of freshly made bread. It is made of cooked and mashed chickpeas which is blended with some tahini, garlic, lemon juice and salt and garnished with olive oil or butter plus some herbs and pine nuts. The recipe is very easy to prepare. I do keep cooked chickpeas in my freezer in packs ready to be turned into hummus in urgent cases :) Here comes my recipe for this delicious dish:
boiled chickpeas - 600 gr (you can also use canned ones preferably with no additives but home cooked tastes much better)
tahini - 70 ml
1 clove garlic (you can use more if you want a stronger garlic taste)
1 small lemon or lime - juiced
Instructions:
Put boiled chickpeas, tahini, garlic, lemon and salt into your food processor. Pulse until it becomes a smooth paste. If it turns to be too thick, add a couple of tablespoons of hot water into your mixture and keep pulsing. If you use canned chickpeas, do not add salt into your mixture since the canned ones already include salt in them.
Transfer your mixture into a serving dish. Meanwhile melt the butter and add the olive oil and the pine nuts into that. Keep stirring the pine nuts with a wooden spoon until they turn to golden brown. Sprinkle some chili peppers and cumin over your hummus and garnish it with the pine nuts and the oil that comes together with it. Serve it hot. Bon appetit.
